**Giacomo Esposito** is a writer and observer of Italian culinary culture. He writes about food, products and places, approaching cuisine as part of local history and everyday life rather than simply a collection of recipes. Sardinia is particularly close to his work. He has spent years documenting the island’s food culture, travelling between the coast and the interior. His interests lie especially in traditions preserved beyond the official culinary record: family recipes, local produce, rituals around the table and small restaurants where regional cuisine retains its own distinct language. Instead, he looks for context — the history of an ingredient, the origins of a dish and the people who have kept it alive. He lives in Italy and divides his time between Bologna and Sardinia.
